I had earliar experiances with Synfire and Harmony navigator and never got a huge friend of the sound and instrument system. Now I whant to give it a new try and re-installed Synfire but only to find that the old messed up installation also came back.... in my face .....
So my question is, how could I get get an total new and fresh installation so I could start all over from a blank paper?

An uninstall will preserve your setup and saved projects. However, since the thing that got messed up in the past most likely was the global rack, which also includes many global defaults, sounds and settings, restoring a clean global rack might help.
Be sure you installed the latest update. In the Audio & MIDI Setup window, do File >> New. That will create a new global rack with factory defaults and sound assignments.
Note that the factory rack will be based on audio plugins only if an Audio Engine is running (otherwise the internal MIDI synth will be used - not recommended). So if necessary, just launch the 64 bit engine before you do File >> New. You can do so from the options menu (cog wheel).
