After reading the above WIKI, I am a little concerned, as I do not want to use audio or VST/ VSTi in SFE.
1. Can I set up SFE just as described for the HN2 setup?
2. Can I install SFE and not install the audio engine?

The Engine installs always, but you can disable it in Audio & MIDI Setup. It is much easier though to simply not use it.
You can use the same setup as with HN2, if you really want.
The Engine can be very useful for serving a shared rack that sits in the background and is alyways playable regardless which songs you have open. Prototyping is almost useless without that, unless you have external hardware for this purpose.

Does it eat cpu when it's in the background when it's not used ?

Ahh! But I do ... and lots of it.

I would keep the engine with a shared rack based on a gm soft synth just until you are comfortable creating a device an template for your external synths. Possibly for all time as it makes it very easy to audition chord progressions, sketches and the like without worry.
All my songs use either plugin instruments or midi drones to external synths but I still keep the standard gm synth shared rack. But the shared rack isn't used except to preview stuff in libraries etc.
