What is the catalogs influence in detail?
I changed the priority of some intervals, such as the m7 to 0 from 3. What exactly does that do?
Does this at all effect what notes are picked when changing the interpretation parameter? If so, exactly how?

Interval structure priority does not influence interpretation. The harmonizer and figure recognition use it to determine which chords and scales to consider when there are multiple options. If you prefer certain chords to others, you can adjust their priority. However, the setting is primarily used to distinguish commonly used chords from rarely used ones
